ATOMIC BUFFALO BITES
INGREDIENTS:
12 fresh jalapeno peppers
12 slices of bacon
24 little smokies
1 package of
cream cheese (room temperature)
2 teaspoons paprika
1 teaspoon cayenne pepper
1 tablespoon Wild Bill's Meat Rub
2 tablespoons brown sugar
1/4 cup
Frank's Red Hot Sweet Chili Sauce
1/4 cup
Orange marmalade
24 tooth picks
Cut the ends off each jalapeno pepper, split in half length wise and
scrape out the seeds and the white membrane. If you want the jalapeno
very hot, leave part of the white membrane on them. It might be a good
idea to wear disposable gloves to prevent the jalapeno juice from getting
into the pores of your hands.
In a mixing bowl, combine the cream cheese, paprika and cayenne pepper.
Using a butter knife, fill each jalapeno half with a generous portion of the
cream cheese mixture.
Top each of the jalapeno "sleds" with a little smoky.
Wrap each of the smoky topped jalapenos with a half slice of bacon, making
sure that the seam is directly on top of the little smoky. Secure the
wrap by inserting a toothpick straight down through the overlapping edges of
the bacon all the way through
the little smoky. Stop just short of going through the pepper though,
that way the cream cheese doesn’t leak out through the hole.
Combine 1 tablespoon of Wild Bill's Meat Rub with 2 tablespoons of brown
sugar mixing well and sprinkle on top of each atomic buffalo bit with a generous
sprinkling of the sweet rub mixture.
Place atomic buffalo bites on a baking tray and place in a 250 degree F.
oven for about 2 hours until the bacon is done. If you desire crispy bacon, turn oven to 300 degrees and
let the atomic buffalo bites bake another 30 minutes.
Remove from the oven and allow to cool down about 15 minutes and mix 1/4 cup
of Frank's Hot Chili sauce with 1/4 cup of orange marmalade and place a
generous portion on top of each atomic buffalo bite.
YIELD: 24 atomic buffalo bites

This is a generic tailgate recipe from the internet of which the recipe is
called Atomic Buffalo Txxds. I will let you fill in the blanks.
I modified the rub and also used a different combination for the sweet BBQ
sauce.
It is easy to figure how this recipe was named. I consumed eight of
them very quickly and had to pour myself a cup of milk to take some of the
heat out of my mouth. My
lips were tingling pretty good but they are really not that hot for someone
that is accustomed to eating spicy foods. After they cooled down some,
I had a few more and they were not that hot to taste....maybe my taste buds
were knocked out a little. This is a must
do Hors d'Oeuvres recipe for a spicy snack and very
easy to do. I still did not get the final plated picture that I was
after. The home studio lights I ordered came in this afternoon and
will get the basement "studio" set up and see what I can do with them.
It takes way more available light using the Canon DSLR than it does with the
smaller point and shoot camera that I have and the Canon flash doesn't put
out enough light but will have to get my learning curve in gear and figure
some things out!
