Baked French Toast Casserole

BAKED FRENCH TOAST CASSEROLE

INGREDIENTS:

1 loaf French bread (13 to 20 slices)
8 large eggs
2 cups Half-and-Half whipping cream
1 cup milk
1/4 cup granulated white sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon Kosher or Sea Salt
1/2 teaspoon ground or fresh ground nutmeg

Slice French bread diagonally into 13 to 20 slices, 1 inch thick.  Line the bottom of a 9 x 13 inch buttered baking dish with a single layer of bread slices.   In a large mixing bowl, combine eggs, half and half, sugar, vanilla, cinnamon, salt and nutmeg using a whisk or smaller electric mixer. Mix well but do not over beat.  Pour half the egg mixture over the French bread slices and turn over the bread slices to fully coat.  Add another layer of bread slices over the first layer and pour the balance of the egg mixture over the top and turn over the bread slices of the top layer to make certain they are fully coated.  Cover with aluminum foil and refrigerate overnight.

The following day, preheat oven to 365 degrees F.

Spread Praline Topping over the top of the bread and bake for 40 minutes until puffed and lightly golden brown.  Serve with maple syrup and fresh fruit such as sliced strawberries or fruit of your choice.  Top with powdered white sugar and/or Whipped Cream.

PRALINE TOPPING (OPTIONAL)

INGREDIENTS:

2 sticks unsalted butter, melted
1 cup packed light brown sugar
1/2 cup coarse chopped pecans
1/2 cup coarse chopped English walnuts
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Combine all ingredients in a medium bowl and mix well.

YIELD:  8 large servings

This recipe was inspired by Aline and Roy Mosteller of Hayesville, NC.  My bride was at a weekend retreat in Hayesville, NC last year with her sisters and Aline and Roy served them breakfast at their home and this was one of the dishes served.  My bride commented about how wonderful the baked French toast aroma and taste was and I called Aline and she mailed me her recipe.  I changed the recipe by adding the Praline Topping which is optional and added the Half-and-Half whipping cream.  Aline also placed a single layer of the overnight soaked French bread on a 10 x 15 inch baking pan (13 to 15 slices) in a single layer and baked them for 10 minutes at 400 degrees F. (turn slices over optional) and then sprinkled the chopped walnuts over the top and baked an additional 10 minutes; sifted powdered sugar over the top before serving.  My bride said they served the baked French toast with maple flavored link sausage, eggs and a variety of fresh fruits and it was off the chart.  Aline and Roy Mosteller are very giving, kind and genuine Christians on fire for the Lord and lead by example!

This modified version of the recipe is certainly "off the chain good" as well.  We drizzled Vermont Grade A maple syrup over the French toast and it was outstanding!  I certainly devoured the above plate of food above and I wasn't hungry until very late in the day.

My bride did the food styling with the sliced strawberries.
