BBQ RIBS

INGREDIENTS:

Pork ribs, baby back or ribs of your choice
4 cups apple cider* 
2 tablespoons Wild Bill's Meat Rub or dry rub of your choice
3 cups water as needed

BBQ SAUCE FOR RIBS

INGREDIENTS:

1 cup ketchup                           3 tablespoons Worcestershire sauce
1/2 cup dark Molasses            3 tablespoons light brown sugar
1/4 cup chopped onions          1 tablespoon garlic powder
1 teaspoon black (Tellicherry) 1 teaspoon cayenne pepper
2 teaspoons lemon juice     1/2 cup Balsamic vinegar or red wine vinegar
2 teaspoons dry mustard

Add 4 cups of apple cider to the bottom of a roasting pan. Coat pork ribs heavily with your favorite meat rub; in my case it is my own Wild Bill's Meat Rub.  Place ribs on top of insert of the broiler pan and wrap in heavy aluminum foil folding foil overhang underneath the roasting pan to create as tight a seal as possible to steam the ribs.  Place in a 350 degree oven for one hour and reduce heat to 250 and leave an additional hour.

While ribs are cooking, add the BBQ sauce ingredients in a heavy stock pot and bring to a boil and reduce heat to simmer and sauce should barely be bubbling and simmer about 5 to 10 minutes until sauce is the desired thickness and turn burner off.  After two hours are up, remove roasting pan and remove aluminum foil carefully since you will use it again and brush the BBQ rib sauce heavily on ribs and place aluminum foil back over the ribs. Increase oven temperature to 350 degrees and after one hour check the ribs for tenderness and coat the ribs with additional BBQ rib sauce. Reduce oven temperature to 300 degrees and after 30 minutes remove from oven and serve with your favorite sides.

Above moist and succulent  ribs served with marinated slaw and fried cornbread on 02-28-09.  Ribs were falling off the bone.

Many folks will boil the ribs for an hour or so to help tenderize them before placing them on the grill,  but the aluminum foil method will work on the BBQ grill outside or in the oven as today.  *You can add beer, wine or liquid of your choice to the roasting pan to help add additional flavors but the main reason is to steam tenderize the ribs and get them done enough before you start applying the bbq sauce.  This bbq sauce since it has sugar and ketchup will turn dark on you but it will certainly have you wondering why you have been purchasing "store bought" bbq sauce instead of making your own; whereas  most of the ingredients for commercial bbq sauces are already in your kitchen cabinets such as this bbq sauce recipe.   The sauce is a little on the spicy side and if you want to reduce the heat, leave out the cayenne pepper.  This bbq sauce is sweet, tangy with some heat and is a must for ribs!
