CAJUN STYLE CHICKEN TENDERS WITH HONEY MUSTARD SAUCE
INGREDIENTS:
1 1/4 pounds chicken
tenders,
cut into bite size pieces for nuggets if desired
1 cup all-purpose flour
2 teaspoons Wild Bill's Meat Rub
1 teaspoon freshly ground black peppercorns
(Tellicherry)
1 tablespoon
Morton table salt
3 large eggs, at room temperature, beaten
1 tablespoon
Louisiana Hot Sauce
1 cup all-purpose cornmeal
2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/3 cup honey
1/3 cup Dijon or whole-grain mustard
Olive oil, for drizzling (optional)
Vegetable oil cooking spray
Preheat oven to 425
degrees F. Spray a heavy baking sheet liberally with vegetable oil
cooking spray. Set aside. Honey-Mustard Sauce: In a small serving
bowl, mix together the honey and mustard until smooth. Set aside.
Breading: In a flat bottom pan, mix together the flour, 1 tablespoon salt,
black pepper and 1
teaspoon Wild Bill's Meat Rub. In a second flat bottom pan, whisk together
the eggs and hot sauce. In a third flat bottom pan, mix together the cornmeal,
chili powder, 1 teaspoon Wild Bill's Meat Rub and cayenne pepper.
Dredge the chicken in the flour and then into the egg mixture. Allow any
excess egg mixture to drip off and coat the chicken in the cornmeal mixture.
Arrange the breaded chicken in a single layer on the prepared baking sheet
and place in oven on center rack. Bake for 10 minutes and turn
pieces over gently and bake until
golden and cooked through, about 10 minutes. Arrange the chicken
on a platter and serve the honey-mustard alongside.
YIELD: 3 servings of 2 chicken tenders each
Above chicken tenders baked on 01-16-15 and were outstanding. They
have a spicy kick to them and were too
spicy for my bride but I could handle them ok. My nose did start to
get athletic but I enjoyed them very much and the honey mustard sauce
actually cut the fire back a little on the chicken tenders.........grin if
you must!
This recipe would work for catfish fillets if you wanted them spicy!
