CALAMARIINGREDIENTS:
1 pound
squid, cleaned
and cut into 1/2 inch rings
2 cups peanut oil for frying
2 cups buttermilk
1 cup
all-purpose flour
2 teaspoons Kosher or Sea salt
1 teaspoon fresh ground black peppercorns
(Tellicherry)
1 teaspoon Wild Bill's Meat Rub
1 lemon wedge for garnish
Clean squid and cut into 1/2 inch rings and soak for three hours in two cups
of buttermilk. Place a heavy bottomed deep frying pot on medium heat,
add 2 cups peanut oil and heat to 365 degrees. While oil is heating
up, sift flour, salt, black pepper and Wild Bill's Meat Rub into a flat
bottom pan. Drain squid thoroughly and dredge (coat) in the seasoned
flour mixture making sure to cut and separate each individual ring. Shake
excess flour mixture off and add to the hot oil. Fry until light brown
about 3 minutes. Drain on paper towels. Do not overcook,
otherwise
calamari
will become tough. Serve with your favorite marinara sauce or Thai
Sweet Chili Sauce and garnish with fresh lemon wedge.
