LI'L CHEDDAR MEAT LOAVES
INGREDIENTS:
1 egg
3/4 cup milk
1 cup (4 ozs.) shredded sharp
1/2 cup quick-cooking oats
cheddar cheese
1 teaspoon salt
1/2 cup chopped onion
1 pound lean ground beef (venison works very well too)
2/3 cup ketchup
1/4 cup packed brown sugar (see note below) or reduce to 1/8 cup
1 1/2 tablespoons prepared mustard 1/2 teaspoon fresh
ground black peppercorns

In a bowl, beat the egg and milk. Stir in cheese, oats, onion and
salt. Add beef and mix well. Shape into eight loaves; placed in a
greased 13-inch x 9-inch x 2-inch baking dish. Combine ketchup, brown
sugar and mustard; spoon over loaves. Bake, uncovered, at 350 degrees
for 45 minutes or until the meat is no longer pink and a meat thermometer
reads at least 160 degrees.
YIELD: 8 servings.
Note: The sauce is too sweet for my taste, therefore reduced the
brown sugar to 1/8 cup or less and original recipe had 1 1/2 teaspoons of
prepared mustard but increased the amount to tablespoons. This recipe
was originally published in Taste of Home if I not mistaken.

I used 1.5 lbs. of 100 percent ground venison for this recipe today and
Extra Sharp Cheddar Cheese!
Used a low tech item instead of the food processor for shredding 1/4 lb.
of the sharp cheddar cheese. Easier to clean...grin now!

finished product.

Cheddar meat loaves formed into oblong shape and placed on a heavy duty
cookie sheet with the sauce on top and ready for the 350 degree F. oven. Recipe
calls for a 13x9x2 baking dish but how many men can follow instructions or
use a road map ladies? Grin again! I would definitely use the
baking dish if taking to a covered dish dinner and it saves one less item to
clean.

Those little individual serving size Li'l Cheddar Meat Loaves were served
with mashed potatoes, green peas and rolls and were fantastic even if I did
do them myself. PS: I flipped one upside down while
placing in the serving plate which is easy to pick out; Give this recipe a
