CHICKEN OF THE WOODS MUSHROOMS
INGREDIENTS:
1 lb. mushrooms cut into 1/2 inch width pieces
2 tablespoons extra virgin olive oil
2 tablespoons butter
(Land-o-Lakes)
1/4 cup Port wine
1 cup Chicken broth
1/2 teaspoon salt
(Morton)
1/2 teaspoon freshly ground black peppercorns
(Tellicherry)
1/2 teaspoon minced garlic, fresh or prepared in oil
1/2 teaspoon Wild
Bill's Meat Rub
In a large skillet over medium heat, heat olive oil and butter; add
mushrooms and garlic; simmer for 7 minutes with the lid on the skillet.
Deglaze skillet with Port wine. Add chicken broth, salt, black pepper,
Wild Bill's Meat Rub and stir to combine all ingredients. Simmer on
low to medium
heat with lid off the skillet for an additional 10 minutes until all the
liquid is absorbed. Serve with your favorite meal as a side.
YIELD: 4 servings.
Above Chicken of the Woods
Mushrooms prepared on 09-10-18 and they were
totally awesome. Whoever named this mushroom, hit the nail on the
head. They do remind you of Chicken in taste and texture, however they
still have their own unique woodsy flavor. I gave
my bride a sample and she was stoked over the taste as well. Not too
often do I get euphoric over a recipe, but this one brought on a state of
euphoria to the taste buds and palette for sure.
I watched the cluster of Chicken of the Woods Mushrooms growing for
the past few weeks while checking on my
hunting location and decided to harvest
them today. I had already done my recon on this species of mushroom a few years
back which is safe to eat and finally decided to cook them today. I only
used about a pound of them and froze the balance in two bags for later
usage.
NOTES: Gently clean the mushrooms under running cool tap water with a
brush removing any dirt or debris. Place on paper towels to air dry
until ready to use.
There are several varities of the chicken of the woods mushrooms and this
one is the
Laetiporus Cincinnatus as noted by
the underside being white pored.

Before consuming wild mushrooms, it is imperative that you
positively
identify the species, because many are not editable and poisonous. If
in doubt, seek expert opinion and advice.

HARVESTED MORE MUSHROOMS
Yesterday 05-18-19, our 5th and youngest Grandson Xander McKnight
Gonzales and myself went hiking and on the return trip, I spotted a
good cluster of Chicken Of The Woods mushrooms that was prime and ready to
be harvested.
Below a few pixs taken and the cluster of mushrooms was washed, any dirt
and debris removed along with washing the ants away who also love the taste
of those "beautimous" mushrooms.

The mushrooms were processed and placed into freezer bags and will
provide some wonderful vittles later on. I still have a bag or two of
the mushrooms processed from last year and will fry a big batch of those
beauties very soon.
And yes, they do taste like chicken along with the texture as well.
