Cowpeas

COWPEAS

INGREDIENTS:

2 lbs. fresh shelled cowpeas
1 1/2 to 2 lbs. smoked pork neck bones (deboned)
1 1/2 cup diced sweet onion
2 cups beef broth
1 teaspoon Morton table salt, to taste
1 teaspoon granulated sugar
1/2 teaspoon freshly ground black peppercorns (Tellicherry)
1 beef bouillon cube
Water to cover cowpeas in Crockpot
Garnish with chopped green onions

YIELD: 10 or more servings

Place smoked pork neck bones in a medium size pot and cover with water and boil with lid on pot until meat will pull from the bone, or place in a small pressure cooker. If using pressure cooker, pressure cook for 45 minutes. Discard the bones and any fatty tissue.

Place all ingredients in Crockpot and cook on low for eight (8) to ten (10) hours until cowpeas are tender.

Garnish with chopped green onions and/or garnish of your choice. Serve as a side dish while hot.

I added the diced home grown tomato for eye candy for the camera, grin if you must!

Above cowpeas prepared on 07-03-2024 and were "off the chain good."

The cowpeas were given by a friend Shane Hough and my bride shelled most of them which were a five (5) gallon bucket about full. This recipe from our daughter Laura Porter who brings cowpeas to our family functions and holidays and she is an outstanding cook too!
