Crock Pot Macaroni And Cheese

CROCK POT MACARONI AND CHEESE

INGREDIENTS:

3/4 stick margarine                            1 teaspoon salt
2 eggs, beaten well                        1/2 teaspoon freshly ground black peppercorns (Tellicherry)
1 1/2 cups milk                                   3 cups grated extra sharp cheddar cheese
1 (12 oz.) can evaporated milk      1 (8 oz.) box macaroni, cooked and drained

Melt margarine and put in the bottom of crock pot. Combine beaten eggs with both milks, salt and pepper. Then add 2 1/2 cups cheese and the macaroni to the milk mixture. Pour into crock pot and sprinkle remaining cheese on top. Cook on low setting for 3 hours.

YIELD: 10 to 12 servings.

NOTE: If you want to make this a Cajun Crock Pot Macaroni And Cheese, add these ingredients: Sauté 1/2 cup chopped onion, 1/2 cup chopped bell pepper in one tablespoon olive oil until tender, about 5 minutes. Add to the macaroni and milk mixture with 1 tablespoon of prepared mustard. Also, replace 1/2 cup of the cheddar cheese with grated Romano or Parmesan cheese.

Sequence pixs below on 01-18-09. I added a couple of the Cajun ingredients; onions and bell pepper. Also, I used Penne Ziti Pasta which is 100 percent Italian made from Durum Semolina instead of regular macaroni elbows. Click on thumbnails for a larger view.

The ole crock pot above is about on it's last leg....the heating element is getting very tired and not as much wattage as it use to be especially on the low setting. It is ok if I don't run the overhead ceiling fan in the kitchen directly above the island/work station combination bar setting which cools down the crock pot considerably. I have replaced this crock pot with a couple crock pots but have noticed their temperature even on the low setting wants to burn things around the top edge and on the bottom edge of the crock pot clay liner. I don't think this problem is common just to me since several others have made the similar comments. I guess when the new crock pots get broken in, the initial heating element wattage will reduce some or hope so anyway. I sure do hate to toss this ole work horse crock pot of which has been an excellent one and nothing high tech about it either.
