DAVID LEAR’S FISH FRY
David Lear invited yours truly to a fish fry at his home in Cordova, NC on
07-19-03 which is in Richmond County and not too far from the Pee Dee River.
I met David Lear when he went to work with The Brown Creek Correctional
Institution in the maintenance
department. David is a true outdoorsman and loves to deer hunt and
fish of which we became instant friends since we share the same love of the
outdoors. David later transferred to the Lanesboro Correctional
Institution which is adjacent the BCCI with a promotion to HVAC supervisor
and we still maintained contact.
David has invited me many times in the past to go deer hunting with him but
I never got around to it since I was having great success on my own hunt
land and when the invite for the fish fry came up, there definitely was no
turning that down that invite as much as I love fresh caught and fried
catfish or any freshwater fish.
I arrived at David Lear’s home sometime around 2:00 PM and David Lear,
Robert Webster and William Pence were already busy skinning catfish that
they just recently caught on a trot line in the Pee Dee River. All the
catfish were Blue Catfish and probably averaged between 25 and 40 pounds
each rendering very large beautiful fillets of white meat.
The big blue catfish has David's legs about to buckle in the below pix
below:
It didn’t take those three very long to have those catfish skinned, filleted
and cut into smaller portions and Robert Webster had a gas burner and large
cast iron skillet with oil heated up to deep frying temperature like he was
demon possessed or something. One thing about
Robert Webster; he knows his way around
cooking and consumes his share like the rest of us too.......grin if you
must!
Robert has coated those catfish fillets in
House-Autry Seafood Breader
using a plastic zip-lock type bag to evenly distribute the coating mixture and then directly into the hot oil and it
doesn't take those fillets very long to turn golden brown and ready for the
plate. Visit my deep fried fish
webpage for a few close-up pixs of fried fish.
William Pence is looking serious in the below pix; maybe fixing a few
dropper lines and hooks for the trot line. William emailed me and
stated that he was rigging up some dropper lines and melting the ends of the
nylon line and was paying attention to that detail since he didn't want to
melt his fingers instead of the line :
William Pence below working out with the skinning pliers to get this ole
blue catfish ready to give up those wonderful fillets:
I was strictly an on looker with the little digital camera in hand taking
pictures to document the occasion and probably did a good amount of wiping
the saliva from the corners of my mouth anticipating the taste and crunch of
those beautiful moist succulent golden catfish fillets that were soon to be
on my plate. Robert Webster had several
batches of those golden fillets ready as if he was cooking for a platoon of
hungry Marines that just got in after a 30 day survival school. We each tore into those fish fillets
reminiscent of a school of
Amazon River piranhas on a fresh kill. As evidenced by the pix below,
I don't think them any of us had missed a meal in a very long time.....…..grin if you must!
Below, Bill Porter kicking back somehow got into the pix. David
Lear must have been behind the camera on this one; got a catfish fillet in
one hand and a plate of those beauties in front of him ready to finish them off. Store
bought farm raised catfish do not compare with catfish that have been fresh
caught from either the Pee Dee River, lake or pond that are allowed to range
freely consuming a varied diet.
Each one of us was tight as a Georgia tick on the back of a coonhound in the
month of July and we sat around and hashed over some ole hunting and fishing
stories until it was time for them to go back and re-set their lines.
David gave me a several large bags of the fresh catfish fillets to take home and
I later turned them into a fantastic
catfish stew.

After that wonderful catfish fillet meal, we went to a nearby pond to
secure some bait and while there observed a bee hive in the side of an ole
unoccupied
cabin of which bees were gathering nectar to transform into some honey for
their winter food supply.
The pix below shows the bees entering the side of the house accessing
their hive...I kept my distance the best I could and used all the zoom the
little digital camera had to keep from getting bee stung while taking the
picture.

for sure:
I had the above pixs archived on a CD and ran across them while looking
for other pixs and decided to web publish them today. Even though this
was around 10 years ago, it still seems like yesterday in my "mind's eye."
Anytime you have friends together enjoying themselves with what I call
"fruits of the
harvest" and the ensuing fellowship that follows, it just
doesn't get much better than this. It is great to live in a Country
where we can enjoy what God our creator has for us to enjoy if we will only
take the time to smell the roses and give appropriate daily prayer and
thanks for this freedom that has come with a great sacrifice in human lives
and suffering over the centuries of time!
It is my prayer that somehow America will again become the Greatest
Nation on this earth with a spiritual awakening before the current
moral decay of America engulfs all
of us! Our only salvation comes from above.
