DISH PAN DEER
I harvested a small spike buck last week that field dressed
(hog dressed) 87 lbs. and by using a standard formula the game departments
developed by multiplying the hog dressed weight by 1.25 you can get a good
estimate of the live weight of the deer which comes to about 109 lbs. rounded
off. For those that are curious as to how much editable boned meat came
from the 87 lb. field dressed deer, it was only 30 lbs. of pure meat.
Attached are a couple pixs of the deer in a dishpan. I ground the
meat and it will later make some beauteous summer sausage, chili, spaghetti and
anything that you would normally use ground beef for. This particular
dishpan is 15 quarts in size and one would think that there would be more meat
available than 30 lbs. but the scales do not lie. The weight of the
dishpan is about 1 pound and the strap was only a few ounces so the 30 lbs. is
fairly accurate. Well, the work is done for that little spike buck and
will continue to enjoy the “Fruits of the Harvest”. A few of BCCI’s
finest got a chance on Monday and yesterday to do some serious sampling of my
Cajun blend venison summer sausage. Our contractual dentists Dr.
Hill was given a good sample of the venison summer sausage today and I will see
if my “chumming” technique will work
on him. Most that have enjoyed those “free samples” later get the
ole triple size 10/0 barbed hook into them because that stuff is so wonderful on
the taste buds, not to mention the texture and appearance. Goodness, I am about
to salivate while typing those descriptive words.
My work is done for today, if I can call having fun really work! I sat in
my hunting platform this afternoon but the only visitors were some Squirrels,
Brown Thrashes and Red Birds which all enjoyed my free corn, although it does
come with a risk to the deer. Deer are feeding heavily on white, red and
willow oak acorns getting a good layer of fat and muscles built up for the fast
approaching winter which means lean pickings for some of the animals.
