DRIED BEANS N SMOKED TURKEY WINGS
INGREDIENTS:
2 pound dried beans, Lima, Pinto, Navy (your choice)
2 smoked turkey wings
2 cups beef broth
1 large onion, chopped coarse
2 cloves garlic (chopped fine)
2 teaspoons baking soda
1 small pod Red Pepper or red pepper flakes (1/4 tsp.) (optional)
1 or 2 small ribs of celery, chopped fine (I like it better without the celery)
Mickey Porter that is!
1 teaspoon Liquid Smoke (prefer Colgin
brand)
1 tablespoon EVOO, (Extra Virgin Olive Oil)
1 tablespoon white sugar or Splenda equivalent
Kosher or Sea Salt (to taste) or substitute Mrs. Dash or low sodium salt
1/2 teaspoon freshly ground black pepper corns
(Tellicherry)
1 Beef bouillon cube
2 bay leaves
4 cups water (enough to cover beans about 1 inch)
Cover beans with water in 8 quart sauce pot, add baking
soda and soak
overnight. The soaking of the beans is optional, but I personally prefer
to soak the beans overnight. The next morning, pour off water, add beans
to the Instant Pot and cover them with beef broth and 4 cups water. Add
all the above ingredients except the salt.
Make certain the safety mechanism (red
button) is working on the Instant
Pot, close the lid and set the steam release lever to steam. Set the
Instant Pot to the pressure mode and set timer for thirty (30) minutes.
After the time is up, allow the Instant Pot to rest for 12 minutes, rotate the
steam lever control to quickly release the steam. Once the safety valve
(red button) is depressed, open the lid of the Instant Pot. Remove one cup
of beans from the pot and mash in a bowl and return the mashed beans to the pot
and stir in the mashed beans. This will thicken the bean gravy aka sauce.
Remove the turkey wings and discard the bones and skin, returning the turkey
wing meat back to the Instant Pot. Garnish with green onion tops or
parsley.
Serve while hot with your favorite condiments and sides.
YIELD: 8 servings
Served with baked
sour cream cornbread.
NOTES: This recipe from Rachel Myers of
Wadesboro, NC and I believe it came from a Country Living Cookbook, but not sure
of the origination. Modified for the Instant Pot and used Chicken Broth
less sodium instead of water.
Above dried beans and smoked turkey wings prepared on
03-26-19 and were awesome with wonderful flavor and textures. I did not
have to add any salt to this recipe since there was enough salt in the Swanson
Chicken Broth.
It takes about four (4) hours to do this recipe on the
stove top and I can say these are some of the best pinto beans that I have done
to date and it took about an hour +- total time to have them ready to serve.
Please follow the manufacturer's safety instructions for
using the Instant Pot.

Again, I was totally stoked over the taste and texture of
the beans n smoked turkey wings and the cook time saved using the Instant Pot.
GIANT LIMA BEANS
I cooked two (2) pounds of giant lima beans in the Instant Pop on 06-29-2020 and
they were outstanding. I didn't take any pixs of them at the time, but had
several cartons frozen for later usage and thawed one carton out today being
07-07-2020.
The beans make their own gravy in the Instant Pot and they were outstanding when
cooked on 06-29-2020 and were just as good today. They didn't have the
camera "eye appeal" as when freshly made, but still "off the chain good."
