FRIED GREEN TOMATOES
INGREDIENTS:6 Large Green Tomatoes
2 Eggs
1/2 cup Milk or Buttermilk
1 cup All-Purpose Flour
1/2 cup Cornmeal plain white or yellow
1/2 cup Bread Crumbs
2 teaspoons Sea Salt
1/2 teaspoon fresh ground black pepper corns
(Tellicherry)
1 quart Vegetable oil for frying
1 tablespoon white sugar (optional)
Slice tomatoes 1/4 to 3/8 inch thick and discard the ends. Salt
both sides of each slice and place on paper towels to allow some of the
moisture to drain from the tomatoes to prevent them from becoming soggy
while frying . Whisk eggs and
milk together in a medium-size bowl. Add flour to plate or large bowl.
Mix cornmeal, bread crumbs, salt , pepper and sugar on another plate. Dip
(dredge)
tomato slices into flour first to coat. Then dip (drench) the tomatoes into the
egg milk mixture allowing excess to drain back into the bowl. Dredge
tomato slices in breadcrumb mixture to completely coat.
In a large skillet, pour enough vegetable oil so there is a least 1/2 inch
of oil in the skillet and place over medium heat. Place tomato slices
into the hot oil and do not allow the slices to touch each other. When
tomatoes are golden brown, turn and fry until golden brown on the other
side. Drain on paper towels and serve while hot with your favorite sauce and/or
condiments.
YIELD: 4 to 6 large servings.
Above fried green tomatoes prepared on 07-22-13 and served with fried
rabbit and white rice and rabbit gravy. Delicious!
This recipe is fairly generic and renders an outstanding tasting fried
green tomato. You can substitute buttermilk for the plain white milk
if you desire. You will either like or hate Fried Green Tomatoes.
They have a little "tart" bite to them and if you want to tone down the tart
taste, you can add 1 tablespoon of white sugar to the cornmeal/bread crumb
mixture. You can slice the tomatoes 1/2 inch thick if you desire but
will require a little longer to fry golden brown.

Many folks like their fried green tomatoes dusted (dredged) in flour only
instead of the flour and cornmeal mixture. I personally like them both
ways but the double dipping aka dredge in the flour, drench in the egg/milk
mixture and finally dredge in the cornmeal mixture does add a good "bark" or
coating to the green tomatoes which helps retain their moisture yet allows
the green tomatoes to fully cook on the inside with a golden brown crust or
bark on the outside. I will deep fry them next time in a deep fryer
and see how they come out. I would surmise that restaurants would use
a deep fryer instead of a large skillet for production requirements.

ALTERNATE FRIED GREEN TOMATOES RECIPE
INGREDIENTS:
3/4 cup self-rising flour
1/4 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper corns (Tellicherry)
3/4 cup milk
4 large green tomatoes, cut into 1/4 to 3/8 inch slices
Vegetable oil for frying
1 tablespoon white sugar (optional)
Combine first five (5) ingredients in a large bowl and mix until smooth.
Add additional milk if necessary to get the mixture the consistency of
pancake batter. Slice tomatoes 1/4 to 3/8 inch thick and discard the ends. Salt
both sides of each slice and place on paper towels to allow some of the
moisture to drain from the tomatoes to prevent them from becoming soggy
while frying. In a large skillet add enough oil to have at least 1/2
inch deep in skillet and place on medium heat. Dip tomato slices into the
batter allowing excess to drain back into the bowl. Fry in the hot oil
until golden brown, turn and brown the other side. Drain on
paper towels and serve while hot with your favorite sauce and/or condiments.
YIELD: 3 to 4 servings.
