KFC CHICKEN
INGREDIENTS:
2 cups white flour ( I will use all-purpose)
2/3 Ts Salt
1/2 Ts Thyme
1/2 Ts Basil
1/3 Ts Oregano
1 Ts Celery salt
1 Ts Black pepper
1 Ts Dried mustard
4 Ts Paprika
2 Ts Garlic salt
1 Ts Ground ginger
3 Ts White pepper
1 whole chicken cut up, 4 to 5 lbs., saved the back for chicken n dumplings
1 gallon vegetable oil for deep frying
BRINE SOLUTION
1 tablespoon salt for brine
1 tablespoon brown sugar for brine
1 quart water for brine
Cut fryer size chicken into eight pieces and save
the back for chicken and dumplings. Mix 1 tablespoon of salt and 1
tablespoon of brown sugar in 1 quart cold tap water. Place chicken in
plastic type zip lock bag or stainless steel pan with the brine solution.
Place in refrigerator for 3 to 4 hours.
Mix first 12 ingredients in a pan. Heat oil
in deep fryer to 350 degrees F. Rinse chicken pieces off thoroughly in
cold tap water and pat dry on paper towels. Coat chicken pieces with
the flour seasoning mix and place chicken pieces in deep fryer basket.
Do not over crowd.
For dark meat, deep fry for a total of 18 minutes.
Turn chicken pieces over after 9 minutes. Place on rack over pan to
drain, but draining in the deep fryer basket does an excellent job.
Deep fry the white chicken pieces for a total of 14 minutes and turn over
chicken pieces in basket after 7 minutes.
YIELD: 8 pieces of chicken
The above recipe is a knock off recipe similar to
the chicken Colonel Saunders sold way back when. The KFC chicken today
is bland tasting and greasy in my humble opinion. My recent short
story titled KFC is bland
inspired this recipe.
My own
brined deep fried chicken will far surpass
the current KFC chicken in taste and definitely is not greasy.
NOTE: I cut each breast in half.

My deep fried brined chicken really pops taste wise and I believe it is
because I sprinkle salt, black pepper and
Wild Bill's Meat Rub onto each piece of
chicken and then coat it with a breader mix either home made or House of
Audry's Chicken Breader.
