LAKE TILLERY CAVIAR
Yesterday being April 28, 2017, my friend
Robert Webster of Hamlet, NC called from
Lake Tillery, NC and asked if I wanted any fresh fish of which I replied,
"Yes." He stated they would not be scaled and cleaned aka dressed and
I advised him I still knew how to clean fish.....grin if you must. A
mutual friend and one of Roberts fishing buddies
Bob McLean,
gave him seven (7) fresh caught Crappies to go along with the Sunfish aka
Bream and Shell Crackers that he had caught himself along with a Crappie.
I advised Robert we would not be at
home when he dropped the fish off in one of his coolers due to my bride's
Friday hair appointment. Robert said
he would leave the fish under the carport, of which he did.
Upon arriving home and after a quick lunch consisting of Cheese Burgers all
the way and "tator" wedges prepared by the ladies at
Rayfield Meat
Center on Highway 109 South, which has to be the best Cheese
Burgers in Anson County, NC, it was time to start dressing the fish.
Robert had the fish on ice and it didn't take too long before I had them
scaled, cleaned and soaking in salt water.

While cleaning the fish, I noticed that all the Crappie and a couple of
the Sunfish had eggs aka
roe in them and could not pass the chance up to
have some Poor Man's
Caviar.
The eggs were far too small and definitely not feasible to take them from
the protective membrane and salt them down as with traditional
caviar, therefore went to plan B, which will manifest itself
later .
I believe the darker colored roe aka fish eggs is from a Sunfish and/or
Shell Cracker. The above is just enough for Bill Porter to enjoy.
My bride, definitely will not eat any roe aka fish eggs.
I filleted one of the large Crappie and one of the Shell Crackers which
should be some beautimous eating this afternoon along with some whole
Crappie and Bream.

I froze two bags of the fish and kept one bag out for deep frying along
with the fish roe aka eggs.
ROE AKA POOR MAN'S CAVIAR

After quickly deep frying the roe, I deep fried a few of the whole
Crappie, Crappie fillet and whole Sunfish. I also prepared Hush
Puppies and Nathan French fries. I cheated on the slaw and used store
bought Stoney Gap white slaw which is outstanding too.
Below is a pix of the meal for yours truly with my bride enjoying everything
except the roe aka Poor Man's Caviar.

Our meal was outstanding and thanks to Robert Webster and Bob McLean for
allowing it to happen.
