Lima Bean Salad

LIMA BEAN SALAD

INGREDIENTS

1 to 2 cups green frozen limas cooked (or use canned limas rinsed)
2 cans White Shoepeg Corn (11.4 oz. each)
3 thinly sliced green onions
1/2 cup chopped green bell pepper
Salt ( to taste)
Black Pepper (to taste) (I used freshly ground (Tellicherry) peppercorns)
1/2 cup JFG mayonnaise (I used Duke's mayo)
Bacon crumbled

YIELD: 8 servings

Drain and combine all ingredients. Mix well and chill several hours. Serve on a platter with tomatoes on top.

The tomatoes and green onions are good "eye candy" for the camera!

This is one of my favorite salads.  Carolyn Haigler, deceased, one of my bride's sisters; use to bring this dish to the Adcock Klan get togethers.
