LOBSTER TAIL

INGREDIENTS:

Lobster tail, one per person
Extra Virgin Olive Oil
Butter
Lemon, quartered
Salt - to taste
Freshly ground black peppercorns, (Tellicherry)  - to taste

DIRECTIONS:

Preheat oven to 400 degrees F.  Melt 1 stick of butter and quarter lemon.  Using kitchen shears, cut open lobster shell to the tail. Using a small spoon, separate lobster from the shell and place lobster on top of shell placing on a baking sheet.  Brush melted butter and olive oil on top of lobster.  Lightly salt and pepper lobster.  Place in oven for 12 to 15 minutes until lobster shell is pink and remove from oven.  Do not overcook.  Brush melted butter on lobster again and squeeze lemon juice on lobster.  Serve with vegetables of your choice and/or a pasta salad.  Garnish with finely chopped parsley (optional.)

YIELD:  1 lobster tail per person

My bride aka Joyce and myself enjoyed a lobster tail each with the above sides and was outstanding!
