PASTA SALAD
INGREDIENTS:
1 lb. of pasta of your choice, cook per manufacturers directions
1 tablespoon extra virgin olive oil
1 green bell pepper, diced
3 green onions, diced
1 cup cucumber, sliced and quartered
1/2 cup grated and/or diced carrots
1/2 cup smoked ham slices, diced
3/4 cup black olives, halved or circular sliced
1 cup cherry tomatoes, halved and/or quartered
Fresh chopped basil for garnish (optional)
8 oz.
Fresh Mozzarella Balls or Bocconcini , halved (optional)
1 cup Duke's mayonnaise - to taste ALTERNATE: Package
of Ranch Dressing
1 teaspoon sea salt - to taste
1 teaspoon lemon juice
1 tablespoon granulated sugar
1/2 teaspoon freshly ground black peppercorns,

OPTIONAL VINAIGRETTE DRESSING
1/2 cup extra virgin olive oil
1/3 cup red wine vinegar
1/4 teaspoon sea salt
1/2 teaspoon freshly ground black peppercorns,
(Tellicherry)
1/4 teaspoon dried oregano
1/2 teaspoon minced garlic
1 tablespoon finely chopped parsley
2 teaspoons Italian seasoning
Mix all ingredients and add to pasta and veggies. NOTE:
Mix in a pint jar, place lid on and shake vigorously
OPTIONAL SWEET VINAIGRETTE DRESSING
1/2 cup extra virgin olive oil
1/4 cup white granulated sugar
2 tablespoons vinegar
1/4 teaspoon freshly ground black peppercorns

Mix all ingredients and add to pasta and veggies. NOTE:
Mix in a pint jar, place lid on and shake vigorously
DIRECTIONS:
Boil pasta in an 8 quart pasta pot with at least 6 quarts of water,
adding one tablespoon of extra virgin olive oil and boil for 12 to 18 minutes.
Drain pasta and run tap water to cool pasta down. Drain water from
pasta pot adding pasta and all ingredients back to the pasta pot and mix well.
Garnish with fresh chopped basil (optional.) Serve
warm or cold.
YIELD: 6 or more servings


I used fresh diced tomatoes for the above pixs, cleaned the
mayonnaise off the black olives, ham and green bell pepper for a better
picture! You can add what veggies you like and meat of your choice
as with the seasonings and dressing.

PASTA SALAD WITH OPTIONAL VINAIGRETTE DRESSING



I did the above pasta salad with option vinaigrette dressing on 06-26-2026.
I later went back and added 1/2 pound of diced smoked sausage to one of
the containers and adjusted the salt and pepper to taste. The
pasta salad was "off the chain good."
