PHILLY CHEESE STEAK SANDWICH
INGREDIENTS:
2 lbs. boneless beef rib-eye steaks, strip loin or top round, thinly
sliced
4 soft Hoagie rolls, 3/4 sliced or loaf of Italian or French bread (Amoroso)
rolls if you can find them)
1 large
Vidalia
or White sweet onion, thinly sliced
1 medium Red Onion, thinly sliced
1 green bell pepper, thinly sliced (optional red, yellow and orange bell
peppers for more color)
1 lb. mushrooms, Baby Bella, Shitake or Portabella, coarsely chopped
(optional)
Freshly ground black peppercorns - to taste
(Tellicherry)
3 tablespoons salted or unsalted
butter
1/2 lb. Provolone cheese, thin sliced
2 teaspoons Worcestershire Sauce
Red Pepper flakes (optional)
1 teaspoon Wild
Bill's Meat Rub
1/2 teaspoon Sauer's Meat Tenderizer
Extra Virgin Olive Oil
Kosher or Sea Salt
Place steaks in freezer for about 2 hours; remove from freezer and slice
very thin about 1/16 inch thick or paper thin. Place sliced steak on
pan and lightly sprinkle meat tenderizer and Wild Bill's Meat Rub on both
sides and allow to rest for 30 minutes.
Place large skillet on medium heat and brush steak with olive oil, salt
and pepper. Add 2 teaspoons of Worcestershire Sauce and 1
tablespoon of butter to skillet and cook steak about one minute each side and set aside keeping
warm.
Place a large skillet on medium high heat and add 3 tablespoons of
butter and 3 tablespoons of extra virgin olive oil; add mushrooms, onions
and green bell pepper, salt, red pepper flakes (optional), 1/2 teaspoon Wild
Bill's Meat Rub and fresh
ground black pepper corns and sauté about 10 minutes on high heat until
veggies are tender. If using a
flattop grill to prepare the meat and veggies or two large 13 inch skillets, you can chop the meat into
smaller pieces; mix the meat, onions, mushrooms, bell pepper together
and top with cheese slices and/or Cheez Whiz. When cheese has
melted, place Hoagie roll on top of mixture and scoop from grill and/or
large skillet with a
long bladed spatula and close Hoagie roll.
OPTIONS: You can substitute deli-roast beef, very rare and
thinly sliced but if you want it Authentic, use the frozen rib eye or top
round steak sliced paper thin. Production Delis and sandwich shops now use
Cheez Whiz and
it must work for them but the Provolone is original.
YIELD: 4 to 6
The above Philly Cheese Steak Sandwich prepared on 08-02-14 and used
three
(3) different colors of bell peppers, coarse sliced the veggie medley and
loin strap for more eye appeal. The sandwich was
"off the chain good" with wonderful flavor and texture
and slathered the warm melted Cheez Whiz on pretty heavy!
I used venison loin strap instead of beef.
The Philly Cheese Steak Sandwich is among the top 5 US sandwiches for
certain with the "Poa" Boy sandwich being at the top by many food critics.
The Sloppy Joe, Reuben and Grilled Cheese are right there with them as

I did the Philly Cheese Steak Sandwiches on 06-30-12 and slathered some
Cheez Whiz on each side of the Hoagie roll of which the Cheez Whiz did
not clash with the Provolone melted cheese slices. I was very
impressed with the taste and the seasoning was basically salt, black
pepper, butter and Extra Virgin Olive Oil. About the only
places you will find the Philly Cheese Steak Sandwich in our little town is
when we have some type of large outdoor Fall Festival and vendors from
different parts of the country will come in and set their concession stands
up and many times there has been a vendor specializing in Philly Cheese
Steak Sandwiches but theirs tend to be greasy, meat is too tough and/or dry
and offer a production product. My Philly Cheese Steak Sandwiches
today were way ahead of what I have consumed around these parts. I
know, it might be bragging, but "It is a poor
frog that want croak on his own pond".
