Pineapple Upside Down Cake

PINEAPPLE UPSIDE DOWN CAKE

INGREDIENTS:

1 box Duncan Hines Pineapple Supreme cake mix
1 cup brown sugar, tightly packed
1/4 cup butter
3 eggs
1 can (20 oz.) pineapple slices (You need 12 pineapple slices)
1 jar (10 oz) maraschino cherries without stems and drained
1/3 cup vegetable oil
1 cup reserved pineapple juice from can of pineapple, need to add just a little water to make 1 cup

Preheat oven to 325 degrees F. for a dark or nonstick pan, 350 degrees for regular pan or oven proof dish. In a 13 x 9 pan, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on top of brown sugar side by side. Place cherry in center of each pineapple slice and fill in the gaps between the pineapple slices.

Place cake mix in a medium bowl, add 3 eggs, 1/3 cup vegetable oil and 1 cup of pineapple juice. Mix on low speed with electric mixer for 15 seconds and mix on high speed for 30 seconds. Pour batter over pineapple slices and cherries.

Bake 42 to 48 minutes (44 to 53 minutes for dark or nonstick pan) or until toothpick inserted in center comes out clean. Remove pan from oven and run a knife around the side of the pan to loosen the cake. Place heatproof serving plate upside down onto pan; turn plate and pan over. Leave pan over cake for 5 minutes to allow brown sugar topping to drizzle over cake. Remove pan and let cake cool for 30 minutes. Serve while hot or cold and store covered in refrigerator.

YIELD: 12 servings.

The wild flowers remind me of crosses!

The above pineapple upside down cake was baked for 45 minutes at 325 degrees F. on 03-29-19.

NOTES: I enjoyed the above piece of pineapple upside down cake topped with whip cream. No, I didn't eat the pretty little wild flowers.

For a cake box mix cake, the cake was outstanding; fluffy, moist and very tasty for sure!

I did run into one glitch doing this simple easy recipe. My pan required 12 slices of pineapple and there were only 10 slices of pineapple in the Dole 20 oz. can and had to make a quick trip to the supermarket to purchase another can of pineapple. I had already mixed the cake mix batter and it was getting a little stiff by the time I returned to the kitchen, but all came out well!

I forgot to take a pix of the assembled pineapple slices with the cherries when I quickly found out there were only 10 slices of pineapple in the can and I needed 12 slices. It didn't taken too long to become discombobulated aka confused.....grin if you must!
