PINTO BEAN CASSEROLE
INGREDIENTS:
1 lb. ground beef or ground venison (I used ground venison, no fat
added)
2 tablespoons extra virgin olive oil (if using ground venison)
2 15 oz. cans Luck's Pinto Beans, rinsed and well drained
1 cup chopped onion, coarse
1 cup chopped green bell pepper, coarse
1 8 oz. can tomato sauce
1 4 oz. can green chiles, drained (optional)
1 teaspoon sea salt (to taste)
1/4 teaspoon freshly ground black peppercorns,
(Tellicherry)
- (optional) substitute regular ground black
pepper
1/2 teaspoon Wild Bill's Meat Rub (optional)
1 teaspoon white granulated sugar (optional)
2 boxes 8.5 oz. Jiffy cornbread mix
Heat oven to 400 degrees F. Spray a 9 x 13 inch oven proof dish with
vegetable oil and set aside.
In a large skillet over medium heat, add olive oil, ground venison,
onion, green chiles and green bell pepper, Cook until meat is browned
and veggies are al dente; about 7 to 10 minutes. Add tomato sauce, pinto
beans, salt, black pepper,
Wild Bill's Meat Rub and simmer for 10
minutes. While mixture is simmering, prepare the Jiffy cornbread mix per
package instructions. Pour pinto bean mixture into oven proof dish
and level with a spatula. Pour cornbread mix over the top of the
pinto bean mixture and bake in 400 degree F. oven for 15 - 20 minutes until cornbread is brown on top.
YIELD: 9 servings
Above baked on 10-31-2023 and "off the
chain good." I put some sliced green onions and
cherry tomatoes on top for eye candy for the camera. My bride
said, "It looks like Christmas"
and indeed it does!
Recipe from Robin Preslar on 10-29-2023. I used ground venison
(no fat added) instead of ground
beef. I also doubled the onion and green bell pepper amounts,
added green chiles, freshly ground black peppercorns, sugar and my own house seasoning mix aka
Wild Bill's
Meat Rub.
Rachel Myers shared some of Robins' pinto bean casserole with myself and
my
bride and it
was wonderful! There are many variations of this recipe on the
web, however you can not go wrong with this recipe. If you are
Bambi sensitive, use ground beef!
