JOYCE'S CREAM CHEESE MASHED POTATOES

INGREDIENTS:

4 lbs. baking potatoes             8 ozs. sour cream
    peeled and quartered          8 ozs. cream cheese
1 1/2 teaspoons salt             1/2 teaspoon black pepper
butter, melted, optional*       1/2 cup butter or margarine
fresh parsley, optional*

In large stock pot over high heat combine potatoes with enough water to cover.  Bring to a boil.  Reduce heat to medium; simmer until potatoes are tender, about 25 minutes.  Drain; return to pot.  Add cream cheese, sour cream, butter, salt and pepper.  Mash until smooth.  *Serve drizzled with butter and sprinkled with parsley, if desired.
