SQUASH AND ONIONS
INGREDIENTS:
5 yellow squash, thinly sliced
3 medium onions, thinly sliced
3 tablespoons fatback grease
2 teaspoons Kosher or Sea salt or 1 teaspoon Morton table salt (to taste)
1/2 teaspoon freshly ground black peppercorns (Tellicherry) (to taste)
1 cup water
2 teaspoons sugar
In a medium sauce pot, add all the above ingredients
bringing to a boil and reduce heat to low and simmer covered until squash
and onions are tender and liquid is absorbed which will take about 20
minutes. If too much liquid
remains after squash and onions are done, remove lid and simmer uncovered
stirring constantly to keep from sticking and burning allowing excess liquid
to evaporate. Serve with a side of fried pork chops, fried chicken,
Chicken Fried Steak or pork loin
roast, steamed corn on the cob and fried cornbread.

for over 40 years. The fatback grease is what gives this
recipe it's wonderful distinctive flavor.
