SHRIMP SCAMPI

INGREDIENTS:

1 lb. uncooked shrimp                                 1/4 cup finely chopped fresh parsley
1/4 lb. butter or margarine                          1/4 cup finely chopped onion
1 tablespoon minced garlic                           1 tablespoon fresh squeezed lemon juice
Kosher or Sea salt to taste                               Louisiana hot sauce or cayenne pepper to taste (optional)
Wild Bill's Meat Rub                                          Freshly ground black peppercorns (Tellicherry) to taste
2 tablespoons Extra Virgin Olive Oil

Toss deveined and peeled shrimp with fresh squeezed lemon juice and apply a light dusting of Will Bill's Meat rub and set aside.  Heat butter and olive oil in to a large skillet over medium heat.  Add onions and garlic; sauté about 5 to 7 minutes until onions are tender.  Add shrimp, salt, black pepper, parsley and hot sauce (optional) to mixture and continue to sauté until shrimp are pinkish, about 3 minutes.  Do not overcook.  Serve immediately with a side of Yellow rice or your favorite condiments.

YIELD:  2 servings
