Scallops Wrapped n Bacon

SCALLOPS WRAPPED IN BACON

INGREDIENTS:

12 sea scallops (U-10 size) about one pound
12 slices thick-cut hickory or apple smoked bacon
12 6-inch length bamboo skewers, soaked in water for about 40 minutes
1 tablespoon Wild Bill's Meat Rub
1/2 teaspoon Kosher or Sea salt
Freshly ground black peppercorns (Tellicherry)
2 tablespoons unsalted butter, at room temperature

Preheat oven to 350 degrees F and line a baking sheet with aluminum foil. Place the bacon strips on the aluminum foil and bake until just beginning to get brown around the edges but still very pliable, 12 to 15 minutes. Remove from oven and place on paper towels to drain and cool enough to handle. Preheat your grill to medium-high heat. Season the scallops on all sides with Wild Bill's Meat Rub, which is Bill Porter's standard house seasoning and a lightly sprinkling of salt. Wrap each scallop in 1 piece of the semi-cooked bacon, securing it through the center with a bamboo skewer. When the grill is hot, brush the grates lightly with a non-sticking vegetable spray and place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter or add to your seafood platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately. Served as an appetizer, Remoulade or Cocktail sauce will kick it up a notch!

This recipe fits the category of an appetizer more so than a main dish but serve it on your seafood platter instead of the regular deep fried scallops for a change of pace!
