6 cups yellow squash sliced about 1/4 inch thick ( I sliced them
thinner, probably 1/8 to 3/16 inch thick)
1 large yellow or
Vidalia onion, diced
1 stick butter, reserve 2 tablespoon melted butter for topping
1 teaspoon Wild
Bill's Meat Rub (my house seasoning mix)
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black peppercorns
(Tellicherry)
2 eggs
8 oz. sharp cheddar cheese
8 oz. sour cream
1/4 cup mayonnaise (Duke's)
1 cup crushed Ritz crackers, about 20 crackers (Use Panko Breadcrumbs if
desired)
Preheat oven to 350 degrees F. Spray 9 inch square baking dish and
set aside. Combine squash and onion adding to large skillet on
medium heat with 3 tablespoons butter and sauté with lid on skillet for 15 minutes until
tender. Remove squash and onion from skillet placing in a colander
to remove excess moisture. If desired, place a cheese cloth in
colander and gently squeeze out excess liquid. In a bowl, whisk the eggs, add cheese,
sour cream, Duke's mayonnaise, Wild Bill's Meat Rub, salt and freshly
ground black peppercorns; stir in the squash and onion mixture, mixing
well. In a separate bowl, combine crushed Ritz crackers with
melted butter or use Panko Breadcrumbs instead.
Place the squash mixture in casserole dish and sprinkle the crushed Ritz
crackers on top and bake for 30 minutes until golden brown. Remove
from oven and let sit 10 minutes before serving.
YIELD: 8 or more servings
