SQUASH PUFFS
INGREDIENTS:
1 cup yellow squash, cooked and well drained
1/4 cup finely diced sweet onion (optional)
1/2 cup self-rising cornmeal
1/2 cup self-rising flour
1 tablespoon baking powder
1 tablespoon white granulated sugar
1/4 teaspoon salt
1/4 teaspoon freshly ground black peppercorns
(Tellicherry)
1 egg
Oil of your choice for frying
Combine cooked squash, onion and egg. Add cornmeal, flour, baking
powder, sugar, salt and ground black peppercorns to a bowl and mix well.
Add the squash, onion and egg to the dry mixture and form into small balls.
Deep fry in hot oil until golden brown and drain on a bakers rack and/or
paper towels.
NOTE: I used a 1.75 inch diameter scoop and dropped the squash puff
mixture into the hot oil. I already had a batch of
squash and onions
cooked ahead of time for another meal and used 1 cup of the squash and onion
mixture, well drained.

YIELD: 14 (1.75) inch diameter squash puffs. Make them smaller
if you desire.This was an easy, fun recipe to do and will remind you of
Hush Puppies
and/or Corn Fritters.
Above squash puffs deep fried on 09-16-2021 and were delicious!
