TACO BURRITO GRINGO STYLE
INGREDIENTS:
1.5 lbs. ground beef, ground venison or combination of both
3 tablespoons Extra Virgin Olive Oil, if using ground venison (my
venison has no fat added)
1 package McCormick Taco Seasoning
3/4 cup water
1 16 oz. can Old El Paso Traditional Refried Beans
10 soft flour taco tortillas - 8 inch diameter or diameter of your
choice
2 cups Pace Chunky Salsa
1/2 cup grated sharp cheddar cheese
1/2 cup diced onions
1/2 cup diced lettuce
1/2 cup diced tomatoes
Sour cream - optional
Guacamole - optional
Salt if desire to taste
Black pepper to taste
(Tellicherry) - peppercorns freshly ground)
Place 3 tablespoons olive oil in a large skillet over medium heat, add
ground beef and/or ground venison. If using beef only, omit the
olive oil. Cook until brown and drain grease. Add taco
seasoning and 3/4 cup water, bring to a boil and reduce heat to low and
simmer for 5 minutes uncovered, stirring often.
Heat refried beans in a small heavy bottom pot.
Heat tortillas in a large skillet, one at a time or place desired number
in oven and heat. Cover with aluminum foil until ready to use.
Assemble taco burrito; first add a layer of refried beans in the center
of the tortilla, add meat - 2 or 3 tablespoons, chunky salsa, grated
cheese, lettuce, onions and diced tomatoes. Fold into a burrito or
leave one end open. Serve with any condiments of your choice.
YIELD: 10

This is a fun recipe to do, very nutritious and filling for sure!
If desired, you can close both ends of the tortilla and make a true
burrito, but I like the simple modification with one end open,
whereas I can get more "stuffing"
inside, fajita style......grin if you must!
