VENISON DELUXE BACON BURGER
INGREDIENTS:
2 lbs. ground venison, no fat added
6 slices bacon, minced fine (optional)
2 eggs, lightly beaten
2/3 cup Progresso plain bread crumbs
1/2 cup red onion, diced fine
1 clove garlic, minced fine
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
1 1/2 teaspoons
Morton table salt
1/2 teaspoon Wild
Bill's Meat Rub
1/2 teaspoon freshly ground black peppercorns
(Tellicherry)
6 Kiser rolls
6 cheese slices, your choice
12 slices bacon, fried crisp and drained
Mayonnaise, prefer
Duke's brand
Mustard, regular or Dijon
Vidalia onion, sautéed in
butter and olive oil
Lettuce, your choice
Tomato slices
Dill pickle slices (optional)
Combine first eleven ingredients and form into a large ball and place in
refrigerator covered for 1 hour allowing flavors to marry. Meanwhile,
fry 12 slices of bacon crisp and drain on paper towels. Drain bacon
drippings from skillet adding 2 tablespoons of butter and 2 tablespoons
olive oil and sauté Vidalia
onion slices over medium heat until onions are translucent, about 7 minutes; salt and pepper and set aside.
Prepare charcoal grill and/or ugly drum smoker for 350 degrees F.
Remove meat from refrigerator and form into 6 equal size balls and flatten
out into a patty and make a depression in the center of each patty to
prevent patty from swelling up in the center. Grill each side for
approximately 5 to 8 minutes until juices run clear and top with a slice of
cheese and allow cheese to melt. Slice each Kiser roll in half and
lightly toast in oven on broil. Spread mayonnaise on bottom half and
mustard on the top half. Place lettuce on bottom of roll, top with
burger, tomato, bacon slices, sautéed onion
and/or dill pickle slices. Serve with your favorite side dishes.
YIELD: 6 burgers
Above venison deluxe
bacon burger grilled on 08-18-13 and was excellent! Moist and juicy
with a good infusion of charcoal smoked flavor with complementary flavors of
the sautéed onions in butter and olive oil and crisp fried bacon taking this venison burger to the
"top
of the chart" in my humble opinion. Can you say
"beautimous" out loud?
