VENISON OSSO BUCO AKA BRAISED VENISON SHANKS
INGREDIENTS:
2 to 4 venison shanks (cut in 2 to 3 inch lengths with end of bone
showing) tie meat to the bone with butchers twine
1/2 cup all-purpose flour
2 tablespoons extra virgin olive oil (or substitute butter)
3 garlic cloves, minced
1 white or yellow onion, diced
2 celery stalks,1/2 inch diced cubes
2 medium carrots, 1/2 inch diced cubes
2 cups beef broth
1 cup dry sherry or port wine
2 cups diced tomatoes (optional)
1 tablespoon tomato paste (optional)
1 tablespoon
Wild Bill's Meat Rub
1 teaspoon salt (to taste)
1 teaspoon freshly ground black peppercorns
(Tellicherry)
2 to 3 sprigs of fresh thyme or 1/2 teaspoon dried thyme
2 to 3 sprigs of fresh rosemary or 1/2 teaspoon dried rosemary
1 bay leaf
Zest from one lemon
Preheat oven to 300 degrees F. Pat dry venison shanks. Tie
butchers twine around each shank. Sprinkle Wild Bill's Meat Rub on
shanks and let sit at room temperature for 30 minutes. Coat shanks
with all-purpose flour. In a large
Dutch oven or enamel cast iron brazing dish over medium/high heat, add olive oil and sear shanks on all sides
until brown. Remove shanks from Dutch oven and place on a platter.
Deglaze bottom of Dutch oven with 1/4 cup of red wine. Add onions,
garlic, carrots, celery and sauté for 5 minutes. Add beef broth, balance
of red wine, diced tomatoes, tomato paste, salt, black pepper, lemon
zest, thyme, rosemary, bay leaf mixing well and bring to a boil. Add
venison shanks to the Dutch oven or brazing dish, cover with lid, place in oven and
braise for 3 to 4 hours until tender. Remove butchers twine and
bay leaf before serving.
Serve with Risotto Alta Milanese (Saffron Risotto), Creamy Polenta or
in my case,
Creamed
Mashed Potatoes or
yellow rice.
YIELD: 6 servings
I will save the venison shanks in the future for this recipe.
Above recipe completed on 10-08-2022 and served with a side of yellow
rice.
The Osso Buco would fall off the bone. I was very impressed with
the texture and taste of the venison shanks. However, the veggies had too much of a
tomato acidic taste for me personally and my bride concurred as well!
It might have been better to layer the veggies and cut back on the diced
tomatoes or leave the diced tomatoes out totally in my humble opinion.

HISTORY OF OSSO BUCO: Ossobuco or osso buco is Italian
for "bone with a hole" (osso "bone", buco "hole"), a reference to the
marrow hole at the centre of the cross-cut veal shank. In the
Milanese variant of the Lombard language, this dish's name is òss bus.
I have harvested many, many deer since the middle 1970s with rifle,
shotgun, revolver, muzzle loader, traditional archery equipment and
including the compound and cam bows and more recently the crossbow,
however I have either ground the venison shanks or simply feed them to
my dog and or discarded them with the deer carcass, however I plan to do
my version of this recipe this coming big game hunting season, our Lord
willing of course.
