TWEET'S VIDALIA ONION-CHEESE PIE
INGREDIENTS:
2 1/2 Cups chopped Spanish or Vidalia onions
3 Eggs, beaten
1 Tablespoon margarine, melted (Use butter if desired)
1 Cup milk
1/2 Teaspoon Italian seasoning
3/4 Cup (3 oz.) shredded Sharp Cheddar cheese
1/4 Teaspoon salt
1/8 Teaspoon black pepper
Sauté chopped onions in 1 tablespoon margarine until tender; remove from
heat. Stir in cheese; spoon into prepared cheesy crumb crust.
Combine eggs, milk and seasonings; stir well. Pour over onion-cheese
mixture. Bake at 375 degrees for 25-30 minutes or until set. Let
stand 10 minutes before serving. If desired, garnish with onion
rings and parsley.
This is good with dry beans like pintos or peas.
Yield: One 9 inch pie
CHEESY CRUMB CRUST
INGREDIENTS:
1 3/4 cups cheese-flavored cracker crumbs
1/4 cup plus 2 tablespoons margarine, melted (Use butter if desired)
Combine cracker crumbs and margarine. Mix well. Press into bottom
and up
sides of a 9 inch quiche dish or pie plate. Bake at 350 degrees for 5
minutes.
Yield: one 9 inch pie shell.

Recipe from Rachel Myers, Adcock Family Traditions Cookbook, 1997. This
is a favorite at the Porter household and a big hit to take to a covered dish
function as well.
I found the sequence pixs on 07-01-13 that I had taken several years back while

ONION CHEESE PIE BAKED ON 08-16-2023
My bride formed the cheese it and butter crust and I did the rest.
The pie was outstanding served with her favorite comfort food meal:
salmon patties, mashed potatoes, pinto beans, sour cream cornbread and
fresh sliced home grown tomatoes.
