WHAT YOU GOT HASH
INGREDIENTS:
1/2 cup oil or shortening
1 cup
all-purpose flour
1 cup chopped onion
1/2 cup chopped green onions
1/4 cup chopped fresh parsley
6 cups stock or water
2 teaspoons chopped garlic
3 medium-sized raw potatoes, peeled and cubed
Leftover meat of any kind, cut into 1-inch cubes (amount depends on what's
left)
Salt - to taste
Louisiana Hot
Sauce or ground cayenne pepper to taste
Over medium heat in a large, heavy, high-wallet skillet, heat the
oil, add the flour and make a dark roux. Add the onions, green onions
and parsley and cook until the onions are clear. Add one cup of the
stock and stir until a thick paste is formed. Add the garlic and stir,
then add the remaining stock and stir until the water is mixed with the
roux. Add the potatoes, meat, salt and hot sauce. Cover, reduce
the heat to low and simmer until the potatoes are tender. Serve over cooked
rice.
YIELD: 4 to 6 servings
Above prepared with venison instead of beef on 12-24-14 and outstanding.
I believe I got this recipe from
Justin Wilson's cookbook or one of his
cooking shows. Don't remember which. This is a good way to use
up any left over pork or beef. My Grandma Coley used left over stew
beef and made beef hash, but hers was basically with some chopped up
onions....a guess at the best....been many, many decades ago.
