WILD TURKEY BREAST IN CROCK POT

INGREDIENTS:

2 to 3 lb. Wild Turkey breast, skin removed
10 3/4 oz. can Campbell's Condensed Cream of Mushroom Soup
1 cup chicken broth, less sodium
1 tablespoon Wild Bill's Meat Rub
1 teaspoon Morton table salt
1 teaspoon rubbed sage
1 teaspoon freshly ground black peppercorns (Tellicherry)
4.5 oz. jar. sliced mushrooms, drained
1 cup onion, coarsely chopped
1 red onion sliced, sautéed in butter and olive oil until tender for garnish
Chopped parsley for garnish - optional
Romaine lettuce for garnish - optional
2 tablespoons table salt for brine solution
2 tablespoons light brown sugar for brine solution
1 quart water for brine solution

Remove any fat, gristle and bloodshot areas from Wild Turkey breast.  Place turkey breast in a gallon plastic Zip-lock type bag.  Add 2 tablespoons table salt, 2 tablespoons light brown sugar and 1 quart of water, mixing well.  Press air out of bag and seal, placing in refrigerator for 8 hours.  Remove after 8 hours, rinse under running tap water and pat dry with a paper towel. 

Coat turkey breast with salt, freshly ground black peppercorns and a liberal amount of Wild Bill's Meat Rub.  Let set at room temperature for at least 30 minutes.

Add mushroom soup, chicken broth, sliced mushrooms, rubbed sage and chopped onion to crock pot, mixing well.   Add turkey breast to crock pot, cover and cook on high for 3 hours.  Change to low and continue to cook for an additional 8 hours until tender.  Remove from crock pot placing on a serving platter and let rest 5 minutes, lightly tented with aluminum foil.  Slice across the grain in 1/2 thick slices.

Garnish with sautéed red onions and/or chopped parsley.

Serve with your favorite sides such as rice or wild rice, mashed potatoes, green vegetable and bread of your choice.

YIELD: 6 servings

Above Wild Turkey Breast prepared on 04-18-17 and was excellent.  However, it was not as tender as I would have liked it to be, because I did not brine or place the turkey breast in a marinade.  A few more hours in the crock pot would have been in order, but still a very palatable tasty meal!   Wild Turkey has its own unique flavor, if you don't overkill or mask it with a marinade.  This is the same psychology for not using any kind of steak sauce on a steak!  I want the taste of the steak and not the sauce.

NOTES:  I did not brine the turkey breast but only soaked it in salt water.  The Wild Turkey was in the crock pot around 12 hours due to not brining before hand and/or using my basic game marinade.  If you choose not to brine and/or marinade, slice the turkey breast across the grain in about 1 inch thick slices which will reduce the crock pot cooking time.

The Wild Turkey Breast had a wonderful flavor with just a little kick to it from my Wild Bill's Meat Rub and the freshly ground black peppercorns.
