ANASAZI BEANS IN CROCK POT
INGREDIENTS:
1 pound dried
Anasazi beans
1 medium onion, chopped
1 small pod Red Pepper or red pepper flakes (1/4 tsp.) optional
1 teaspoon Liquid Smoke (prefer Colgin
brand)
1 tablespoon EVOO, (Extra Virgin Olive Oil)
1 teaspoon white sugar or Splenda equivalent (optional)
Kosher or Sea Salt (to taste) or substitute Mrs. Dash or low sodium salt
Freshly ground black pepper corns
(Tellicherry)
1 Beef bouillon cube
2 bay leaves
8 cups water - have water at least 1 to 2 inches above the dried beans
1 can 14.5 oz. chicken broth less sodium
YIELD: 10 servings of 1/2 cup
Rinse Anasazi beans a few times in warm tap water and
drain or soak overnight in water and drain the following morning. Place all ingredients except salt in crock pot and let cook on high
heat for 2 hours. Reduce heat to low and cook for 6 hours or until tender.
Remove bay leaves and add salt (to taste) if needed. Remove one cup of beans from
crock pot and mash in a bowl; add mashed beans back to the crock pot to thicken the bean
"gravy."
Serve with your favorite sides.
Above beans prepared on 02-01-2021 and basically is the
same recipe I use for my
dried beans n smoked turkey wings sans the
turkey wings.
The Anasazi beans were "off the chain good"
with excellent taste
and texture. The Anasazi beans are much sweeter in flavor than regular
pinto beans in my humble opinion!
I added chopped parsley and chopped cherry tomatoes for eye
candy for the camera. I purposely didn't add much soup aka gravy to the
bowl in order to showcase the beans.

The above crock pot is on its last leg and is probably 40
plus years old. I have a replacement or two, but hate to give this one up,
whereas the heating element is about gone and takes far too long to get the job
done. This ole boy is definitely a senior citizen plus age wise; talking about the crock pot and of course yours truly
included................grin if you must!

of Anasazi beans and I decided to cook them today (02-02-2021) in the crock pot.
Mr. C. as I call Calvin, gave me a couple pounds a year or two ago and I did one
pound in the Instant Pot and they came out wonderful.
ANASAZI BEANS HISTORY
Anasazi Beans were one of the few crops cultivated by the
Anasazi. They were found in the ruins by settlers to the four corners area
in the early 1900's. Presently they are grown at 7,000 ft. elevation on
the same land the Anasazi inhabited. Ancestral
Pueblo culture, also called Anasazi,
prehistoric Native American civilization that existed from approximately ad 100
to 1600, centering generally on the area where the boundaries of what are now
the U.S. states of Arizona, New Mexico, Colorado, and Utah intersect.
