DRIED BEANS N SMOKED TURKEY WINGS
INGREDIENTS:
2 pound dried beans, Lima, Pinto, Navy (your choice)
2 smoked turkey wings
1 large onion, chopped coarse
2 cloves garlic (chopped fine)
2 teaspoons baking soda
2 cups beef broth
1 small pod Red Pepper or red pepper flakes (1/4 tsp.) - optional
1 or 2 small ribs of celery, chopped fine (I like it better without the celery)
Mickey Porter that is!
1 teaspoon Liquid Smoke (prefer Colgin
brand)
1 tablespoon EVOO, (Extra Virgin Olive Oil)
1 tablespoon white sugar or Splenda equivalent
Kosher or Sea Salt (to taste) or substitute Mrs. Dash or low sodium salt
Freshly ground black pepper corns
(Tellicherry)
1 Beef bouillon cube
2 bay leaves
5 cups water (have water at least 1 inch above the dried beans)
Cover beans with water in 8 quart sauce pot, add baking
soda and soak
overnight. The next morning, pour off water and cover them again with water
adding all ingredients except the salt. Bring to a boil and reduce to a simmer; allow cooking about
4 hours or until the beans create their own gravy. If your bean juice
(gravy) is not thick enough, remove one cup of the beans and mash or puree them
and add back to the pot and allow to simmer an additional 30 minutes to an hour. When almost finished cooking,
test taste
add salt if needed. Before severing, remove the bay leaves, turkey wing
bones and skin.
YIELD: 10 servings of 1/2 cup
Above dried beans and smoked turkey wings served on
07-14-13 and were "off the chain.good" I let them simmer about seven (7) hours
and they had wonderful taste and texture and did not have to add any additional
salt. The two large smoked turkey wings rendered a good amount of lean
meat after removing the bones and skin. I enjoy this recipe as an
alternate to using ham hocks.
NOTES: This recipe from Rachel Myers of
Wadesboro, NC and I believe it came from a Country Living Cookbook, but not sure
of the origination.

If you don't have several hours to prepare dried pinto beans,
Luck's Pinto Beans seasoned with pork is about
as good as it gets for "store bought"
beans in a can! Guaranteed!
USING CROCK POT
Use recipe above and set crock pot on high setting for 2 hours and then set
temperature to low setting. Some crock pots will do this automatically for
you. Allow to simmer for 10 hours or until beans are tender.

PINTO BEANS AND JOYCE AKA MY BRIDE
When my bride was a little girl
and lived in Belmont, NC, her Mother Nellie Adcock told her that when she was a
little girl and was served pinto beans, she went to sleep at the table with one
"pig tail" on either side of her
plate. My bride relates to me that her Mother cooked the best pinto beans
which had a very thick "gravy". I served my bride's sister Rachel Myers
some of the pinto beans that I fixed using the crock pot and Rachel said they
were just like the ones her Mother made; that was a very good compliment for
sure!
