EASTER WEEKEND 2022
Easter,
which celebrates Jesus Christ’s resurrection from the dead, is
Christianity’s most important holiday. It has been called a moveable feast
because it doesn’t fall on a set date every year, as most holidays do, instead, Christian churches in the West celebrate Easter on the first Sunday
following the full moon after the vernal equinox on March 21. Therefore,
Easter is observed anywhere between March 22 and April 25 every year.
Orthodox Christians use the Julian calendar to calculate when Easter will
occur and typically celebrate the holiday a week or two after the Western
churches, which follow the Gregorian calendar.
This years observance of Easter is April 17, 2022 and ole man winter is
still hanging on to the colder weather that was 54 degrees F. this morning.
I did some last minute shopping at Walmart Super Center in Rockingham, NC on
04-14-2022, whereas our local Walmart store closed. On the return trip
home, I
picked up a couple BoJangles sausage and egg biscuits for my bride and
myself..
My bride wanted to get our immediate family together for Easter this year
and we decided to have our meal outside at our make shift
fire pit if the
weather permits, of which we might get rained out per the recent weather
forecast.
In the past, I have done
deep fried turkeys
but
baked ham seems to be a more traditional meat served at Easter than deep fried
turkey. My bride before her stroke 16 years ago, did most of the
cooking and what I did was doing things like
deep frying fish, deep frying
turkeys and most of the grilling which tends to be a man thing;
more brawn
than intellectual....ok Ladies, go ahead and grin real big!
Our meal for this Easter weekend on Saturday, 04-16-2022 will consist
of grilled hamburgers, hot dogs, venison loin aka back straps, BBQ,
beans, slaw, potato chips and the standard condiments. As stated,
if the weather permits, we will let the grand kids do their hot dog
wieners over an open fire and at the end, do smoers.
Those attending are: Joyce aka my bride, Bill Porter, Laura
Porter, Shane Hough, Travis and Trevor Huneycutt, Lisa, Xander and Lily Gonzales.
PREP WORK
On 04-14-2022, I soaked three (3) bags of venison loin straps in a
solution of salt, brown sugar and water and left in the refrigerator for
about 24 hours. On 04-15-2022, I rinsed them off in cold tap water
and hand cubed them with a meat mallet and placed back into the
refrigerator until ready to remove and coat with a dusting of
Wild Bill's
Meat Rub and let acclimate to room temperature for about 30
minutes to an hour. I will then coat them with a hot mixture of
butter and Worcestershire sauce and place on the hot grill for a few
minutes each side.
The above venison loin aka back straps with a coating of Wild Bill's
Meat Rub and allowed to rest at least 30 minutes before placing onto the
Jenn-Air gas grill.
WORKOUT WITH THE GAS GRILL
With our
Jenn-Air gas grill renovated starting in March 2021, it has
gotten several good work outs, mostly venison loin aka back straps for
the grand boys.
The weather was on the cool side, overcast and misting rain somewhere
around 10:30ish on Easter Eve, therefore the gathering at the fire pit
area was cancelled and decided to have the meal inside.

I had the mixture of butter and Worcestershire sauce.
I grilled sixteen (16) hamburger patties and eight (8) hot dogs.
I tried something a little difference this time on the burgers and
dogs; I added them to the buns and rolls and put them back into
the plastic bag the buns and rolls were in and closed the ends with the
ties and they stayed very warm. I then placed them into an
insulated bag and they stayed very warm until meal time.

already formed into patties when I purchased them, but they are not as
tasty and tender as the ones I form myself since I add eggs, bread crumbs,
Worcestershire sauce, salt, black pepper, diced onions and
Wild Bill's
Meat Rub. I believe those burgers were about the
toughest ones I have ever done on the grill!

We held hands and I let Miss Lily say her prayer,

and I said a prayer on behalf of all of us and what Easter means, the
resurrection of our Lord, Jesus Christ, etc.,

EASTER EGG HUNT OUTSIDE FOR MISS LILY
After our meal, Xander went outside and hid the Easter eggs and it
was time for Miss Lily to find them. Xander didn't make it too
difficult for Lily to find them.

Miss Lily had a tremendous amount of fund looking for and finding the
Easter eggs.
The Azalea blooms are on their last round up and were beautiful this
Spring.
As stated, some of the Easter eggs were not too difficult to find.

In closing, we all had a great time and look forward to the next time
we can be together. As I like to publish at every opportunity on

and friends make life worthwhile and we must put God first in all
