XANDER'S CHICKEN FRY
Our youngest Grandson
Xander McKnight Gonzales is interested in learning
to cook and giving him some pointers when the opportunity presents
itself.
I told Xander a week or two ago that I was going to deep fry chicken and
wanted him to help out. Xander likes my
brined
deep fried chicken and didn't hesitate to tell his Mom Lisa,
"Yes."
We had July 17, 2022 reserved to do the deep fried chicken on a Sunday
afternoon after our
Wadesboro Church of God morning service. On
Saturday morning, I brined the cut up chicken pieces from a couple Food
Lion chicken fryers using a couple tablespoons of regular table salt and
3 heaping tablespoons of dark brown sugar mixed well in 1/2 gallon of regular tap
water. The chicken pieces and brine were placed in a large
stainless steel bowl and allowed to marinate about eight (8) hours in
our basement game refrigerator. The chicken pieces were later
rinsed off in tap water several times to remove the brine and then placed
in a large zip lock type bag in the refrigerator until Sunday afternoon.
Our Church service let out a little early and I immediately came home,
removed the chicken from the frig and coated each piece with a light
coat of Wild
Bill's Meat Rub. In the meantime, I added one gallon or
more of vegetable oil to my deep fryer and it got up to temperature (350
degrees F) before the Gonzales family arrived. I used a breader
consisting of House of Autry Poultry breader and a mixture of plain
flour, Wild Bill's Meat Rub, freshly ground
(Tellicherry) black peppercorns and a small
amount of Cajun Injector Shake On Seasoning Hickory Grill.When the
Gonzales family arrived, I had Xander to coat the chicken pieces in the breader
and place them in the deep fryer basket.
Xander did real well with breading the chicken pieces. When
it comes to flour, I seem to get flour onto everything around including
myself.............grin if you must!
Xander continues to get the chicken pieces breaded.

KFC and
BoJangles chicken to me personally is very greasy and KFC chicken in my
humble opinion is tasteless aka bland without much seasoning at all; not
like the chicken they served many decades ago.
NOTE: The elevated basket does a good job of draining
cooking oil from the chicken pieces.
We deep fried at least four (4) batches of chicken and after each
batch, placed the chicken on a draining rack and tented loosely with
aluminum foil. The internal temperature of the chicken needs to be
at least 165 degrees F. and use an accurate thermometer.
The deep fried chicken was outstanding, whereas Xander did a great
job!
The chicken was served with mashed potatoes, gravy, black eyed peas,
mac n cheese and Mary B's Tea Biscuits. No greens today.

Everyone enjoyed the meal and Xander is ready for another cooking
lesson in the kitchen. My
bride suggested that I teach Xander how to
make Chicken and Dumplings which is one of his favorite foods.
